Ribeye on the bone

A thick-edged steak, with lots of veins of clear fat inside and a thick “eye” of fat almost in the center. It has a bright, rich flavor. Tender, cut from the sparse portion of the back. Can be with or without bone (see Ribeye)

Stripline

Thin sirloin steak. It is more flavorful than Ribeye, with a pronounced meat flavor.

Filet Mignon

Sirloin steak, almost no intramuscular fat. The taste of the steak has a creamy, velvety tenderness.

Flank

Sheep steak. The steaks are lean, but very bright in flavor, with an expressive meat flavor.

Ramp

Steak from the side of the hips. Steak is very popular. Lenten and very mild.

Chuck I Roll

Neck fillet steak. The Chuck I Roll tastes like a Ribeye, but is more wiry.

Osso buco

Shank steak. When cooked properly, the meat becomes tender.
